I have found a great place for meat, desserts, meals already made, chicken, etc. the list goes on and on. Their prices are very reasonable and their products are top notch. They will deliver to your door but it's not far from my apartment so I go there. The staff I have dealt with are awesome. Nothing is too much to ask for them to help you out or answer your questions. The volume of business they have ensures everything you buy from them is fresh or fresh frozen. I have no intention of buying in a grocery store what I can get at COTR. Absolutely fantastic customer service and products. We have used Chicken on the Run at work for our lunch programs, and recently, I decided to try them for home delivery. Recipe Tuesday: Pumpkin Butter Chicken Curry Use our Fresh tender lean COTR Chicken Tenderloins or Fresh Chicken Breasts cut into chunks for a lean mean meal this week!Serve this pumpkin curry topped over a bed of rice and paired with a couple of gluten free flatbread/naan to dip into the sauce. If youโ€™re looking to keep your carbs down you can always serve over some cauliflower rice.Link to our Fresh Chicken: chickenontherun.ca/store/Chicken-Tenders-p55585508Recipe:IngredientsMarinade1/2 cup yogurt (I used dairy free coconut yoghurt but you can use any plain yoghurt)1 tablespoon minced or grated ginger1 tablespoon minced or grated garlic2 teaspoons garam masala1 teaspoon ground turmeric1 teaspoon chili powder1 teaspoon salt2 pounds boneless, skinless chicken thighs cut into bite sized chunks (can sub with chicken breast)Curry2 tablespoons coconut oil1 white or yellow onion, chopped2 tablespoons butter or ghee (non dairy butter if needed or more coconut oil)1 1/2 tablespoon minced or grated ginger1 tablespoon minced or grated garlic2 tablespoons tomato paste1 tablespoon garam masala2 teaspoons curry powder1 teaspoon ground coriander1 teaspoon cumin1 teaspoon salt + more to taste1 (14 oz) can unsweetened full fat coconut milk1 cup (225 g) pumpkin pureeInstructions:1. Marinate The ChickenIn a medium sized bowl: add the marinade ingredients (yoghurt, ginger, garlic, garam masala, turmeric, chili powder and salt).Mix together until fully combined and then stir in the chicken pieces until coated in the yoghurt blend.Cover the chicken and let marinate at least 30 minutes or up to 24 hours.2. CurryHeat the coconut oil to a large skillet over a medium heat. When hot, add the chicken pieces to the skillet and fry until all sides are browned (about 3 minutes). You may need to fry the chicken in batches of 2-3 to prevent the pan from crowding. Once browned, remove from the pan and set aside on a plate. The chicken will cook fully in the sauce 3. Add the butter or ghee (or coconut oil) to the same skillet you used for the chicken. When hot, add the onions and fry until soft, about 5-7 minutes.4. Add the ginger, garlic, tomato paste and spices (garam masala, curry powder, coriander, cumin and salt) and sautรฉ another 2-3 minutes.5. Add the coconut milk and pumpkin to the skillet. Stir until a thick, mostly smooth sauce forms and let simmer for 10 to let the sauce thicken slightly.6. Add the chicken back to the skillet, stir and let the curry simmer another 8-10 minutes until the chicken is cooked through and the sauce is bubbly.Taste and season with more salt if needed.
